Hearty Broccoli Vegetable Soup Recipe
Ingredients
- 2 tbsp olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 celery stalks, chopped
- 2 medium carrots, diced
- 4 cups broccoli florets
- 1 medium potato, peeled and diced (optional, for extra heartiness)
- 6 cups vegetable broth (or chicken broth)
- 1 tsp Italian seasoning
- ½ tsp dried thyme
- ½ tsp paprika
- Salt and black pepper, to taste
- 2 tbsp chopped fresh parsley
- 1 tbsp lemon juice (optional, for brightness)
Instructions
- Heat olive oil in a large pot over medium heat.
- Sauté the onion, celery, and carrots for 5–6 minutes until softened.
- Add the garlic and cook for 1 minute until fragrant.
- Stir in the potato (if using), broccoli, Italian seasoning, thyme, paprika, salt, and pepper.
- Pour in the vegetable broth and bring to a boil.
- Reduce the heat and simmer for 20–25 minutes, or until the vegetables are tender.
- Stir in the fresh parsley and lemon juice.
- Taste and adjust seasoning if needed.
- Serve hot with crusty bread or crackers.
