Hearty Broccoli Vegetable Soup Recipe

Ingredients

  • 2 tbsp olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 celery stalks, chopped
  • 2 medium carrots, diced
  • 4 cups broccoli florets
  • 1 medium potato, peeled and diced (optional, for extra heartiness)
  • 6 cups vegetable broth (or chicken broth)
  • 1 tsp Italian seasoning
  • ½ tsp dried thyme
  • ½ tsp paprika
  • Salt and black pepper, to taste
  • 2 tbsp chopped fresh parsley
  • 1 tbsp lemon juice (optional, for brightness)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Sauté the onion, celery, and carrots for 5–6 minutes until softened.
  3. Add the garlic and cook for 1 minute until fragrant.
  4. Stir in the potato (if using), broccoli, Italian seasoning, thyme, paprika, salt, and pepper.
  5. Pour in the vegetable broth and bring to a boil.
  6. Reduce the heat and simmer for 20–25 minutes, or until the vegetables are tender.
  7. Stir in the fresh parsley and lemon juice.
  8. Taste and adjust seasoning if needed.
  9. Serve hot with crusty bread or crackers.

Tips

  • Add cooked shredded chicken or white beans for extra protein.
  • Stir in a splash of cream or coconut milk for a creamier soup.
  • Store leftovers in the refrigerator for up to 4 days or freeze for up to 3 months.
