High-Protein Triple Berry Bake 🍓🫐🍒
A healthy, protein-packed baked dish loaded with fresh berries, perfect for breakfast, snacks, or dessert.
Ingredients (Serves 4–6)
Dry Ingredients
1 cup rolled oats
½ cup vanilla protein powder (whey, plant-based, or your favorite)
1 teaspoon baking powder
½ teaspoon cinnamon
Pinch of salt
Wet Ingredients
2 large eggs
1 cup Greek yogurt (unsweetened or flavored)
¼ cup milk (dairy or plant-based)
2 tablespoons honey or maple syrup
1 teaspoon vanilla extract
Fruit & Toppings
1 cup fresh or frozen blueberries
1 cup fresh or frozen raspberries
1 cup fresh or frozen chopped strawberries
Optional: 2 tablespoons sliced almonds or crushed nuts
Instructions
1. Preheat Oven
Preheat oven to 180°C (350°F).
Grease a 8×8 inch baking dish or line with parchment paper.
2. Mix Dry Ingredients
In a large bowl, combine oats, protein powder, baking powder, cinnamon, and salt.
3. Mix Wet Ingredients
In another bowl, whisk together eggs, Greek yogurt, milk, honey, and vanilla extract until smooth.
4. Combine & Add Berries
Pour wet ingredients into the dry ingredients and mix until well combined.
Gently fold in half of the berries.
5. Bake
Pour mixture into prepared baking dish.
Sprinkle remaining berries on top.
Optional: sprinkle sliced almonds or nuts.
Bake for 25–30 minutes, until the top is golden and a toothpick comes out clean.
6. Serve
Let cool slightly, then slice into squares.
Serve warm or chilled.
Optional: drizzle with honey or Greek yogurt for extra indulgence.
Tips
Use frozen berries straight from the freezer; they work well without extra thawing.
Swap protein powder flavors (chocolate, vanilla, or berry) for different tastes.
