Mediterranean Chicken Gyro Rice Bowl with Lemon Garlic Feta

A vibrant and protein-packed bowl featuring juicy gyro-seasoned chicken, fluffy rice, crisp Mediterranean vegetables, and a tangy lemon garlic feta sauce. Perfect for meal prep or a wholesome weeknight dinner.


🛒 Ingredients (Serves 4)

🍗 Gyro-Style Chicken

  • 1½ lbs (680g) boneless, skinless chicken thighs or breasts

  • 3 cloves garlic, minced

  • 2 tbsp olive oil

  • 2 tsp dried oregano

  • 1 tsp smoked paprika

  • 1 tsp ground cumin

  • ½ tsp salt

  • ½ tsp black pepper

  • Juice of ½ lemon


🍚 Rice Base

  • 2 cups cooked jasmine or basmati rice

  • 1 tbsp olive oil

  • ¼ tsp salt

  • 1 tbsp fresh parsley, chopped


🥗 Vegetables & Toppings

  • 1 cup cherry tomatoes, halved

  • 1 cup cucumber, diced

  • ¼ red onion, thinly sliced

  • ½ cup kalamata olives, sliced

  • ½ cup crumbled feta cheese

  • Fresh parsley or dill for garnish


🧄 Lemon Garlic Feta Sauce

  • ¾ cup plain Greek yogurt

  • ½ cup crumbled feta cheese

  • 2 cloves garlic, minced

  • 1 tbsp olive oil

  • 1–2 tbsp fresh lemon juice

  • 1–3 tbsp water (to thin)

  • Black pepper to taste

Blend until smooth and creamy.


👩‍🍳 Instructions

1️⃣ Marinate the Chicken

  1. In a bowl, mix olive oil, garlic, oregano, paprika, cumin, salt, pepper, and lemon juice.

  2. Add chicken and toss to coat.

  3. Marinate 30 minutes to 2 hours in the refrigerator.


2️⃣ Cook the Chicken

  • Skillet Method: Heat a non-stick pan over medium-high heat. Cook chicken 5–7 minutes per side until golden and fully cooked (internal temp 165°F / 74°C).

  • Oven Method: Preheat to 400°F (200°C), bake chicken 20–25 minutes.

  • Rest for 5 minutes, then slice thinly.


3️⃣ Prepare the Rice

  • Cook rice according to package instructions.

  • Fluff and toss with olive oil, salt, and parsley.


4️⃣ Make the Lemon Garlic Feta Sauce

  • Blend Greek yogurt, feta, garlic, olive oil, and lemon juice until smooth.

  • Thin with water as needed for drizzling consistency.

  • Chill until ready to serve.


5️⃣ Assemble the Bowl

  1. Place rice as the base in each bowl.

  2. Add sliced gyro chicken on top.

  3. Arrange tomatoes, cucumber, red onion, and olives around the chicken.

  4. Drizzle generously with lemon garlic feta sauce.

  5. Sprinkle crumbled feta and fresh herbs for garnish.


🌯 Optional Wrap Version

  • Use warm pita or flatbread.

  • Spread sauce down the center, add rice (optional), chicken, and vegetables.

  • Fold tightly and enjoy.
