Oven-Baked Honey Garlic Chicken with Baby Potatoes

4 bone-in, skin-on chicken thighs (or breasts)
1 lb (450 g) baby potatoes, halved
2 tablespoons olive oil
Salt and pepper, to taste
1 teaspoon smoked paprika (optional)
Honey Garlic Sauce
¼ cup honey
3 cloves garlic, minced
2 tablespoons soy sauce
1 tablespoon apple cider vinegar (or lemon juice)
1 teaspoon Dijon mustard (optional, for depth)

Fresh parsley, chopped
Lemon wedges (optional)
🔪 Instructions
1️⃣ Preheat Oven
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease a baking dish.
2️⃣ Prepare Chicken & Potatoes
Pat chicken dry and season with salt, pepper, and smoked paprika.
Toss baby potatoes with 1 tablespoon olive oil, salt, and pepper.
Arrange chicken and potatoes in a single layer on the baking sheet.
3️⃣ Make Honey Garlic Sauce
In a small bowl, whisk together:
Honey
Minced garlic
Soy sauce
Apple cider vinegar
Dijon mustard (if using)
Brush half the sauce over the chicken and potatoes. Reserve the rest for basting later.
4️⃣ Bake
Bake for 25 minutes.
Remove from oven and baste chicken with remaining sauce.
Return to oven and bake 15–20 more minutes, until chicken is cooked through (internal temp 165°F / 75°C) and potatoes are tender.
Optional: broil for 2–3 minutes for extra caramelization.
5️⃣ Serve
Garnish with chopped parsley and lemon wedges.
