  • 1 ¼ cups white sesame seeds 145g
  • ¼ cup black sesame seeds 35g
  • 1 tablespoon flax meal 7g
  • 1 teaspoon olive oil 4.5g
  • ½ cup water 120ml
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

  • Preheat the oven to 150C / 300F (electric).
  • Combine all ingredients in a bowl. Mix well and leave to rest for 20 minutes so the mixture can thicken.
  • Place parchment paper into a baking tray and flatten the mixture with a spatula.  This will give you neat edges. My mix covered a 13 x 9-inch baking tray.
  • Carefully pre-cut into squares using a pizza cutter or a knife. Don’t miss this step or the crackers will break if you try and cut them later.
  • Bake for 45 – 50 minutes or until all water has evaporated and the crackers are lightly browned and crisp. The oven time will depend on how thick or thin you have rolled out the dough. Thicker crackers may need 5 – 10 minutes more.
  • Let the crackers cool completely before separating and storing (or eating) them.

0.9g net carbs per cracker. Makes 24 crackers.

3 crackers are a filling snack, which means this recipe makes 7 servings.

Option to add herbs and spices to flavor – think garlic powder, onion powder, paprika, cumin, turmeric, nutritional yeast, Italian herbs.

Store in an airtight container at room temperature for up to 3 weeks.
You can also roll out the dough with a rolling pin between 2 sheets of parchment paper.
