Ingredients
– 2 tbsp olive oil
– 1 onion, finely chopped
– 2 garlic cloves, minced
– 2 carrots, diced
– 2 celery stalks, diced
– 1 zucchini, diced
– 1 potato, peeled and diced
– 1 cup green beans, chopped
– 1 can (14 oz) diced tomatoes
– 4 cups vegetable stock
– 1 can (14 oz) cannellini beans, drained and rinsed
– 1/2 cup small pasta (e.g., ditalini or elbow)
– 1 tsp dried oregano
– 1 tsp dried basil
– Salt and pepper to taste
– Grated Parmesan and fresh parsley for garnish (optional)
Instructions
1. Heat olive oil in a large pot over medium heat. Add onion and garlic; sauté until fragrant.
2. Stir in carrots, celery, zucchini, potato, and green beans. Cook for 5–7 minutes.
3. Add diced tomatoes, vegetable stock, oregano, and basil. Bring to a boil, then reduce heat and simmer for 20 minutes.
4. Add cannellini beans and pasta. Cook until the pasta is tender (about 10 minutes).
5. Season with salt and pepper. Serve hot, garnished with Parmesan and parsley if desired.
