Slow Cooker Cabbage Soup

Ingredients

  • 1 medium head green cabbage, chopped
  • 2 large onions, thinly sliced
  • 3 cloves garlic, minced
  • 6 cups vegetable broth (or chicken broth)
  • 1 can (14.5 oz / 410 g) diced tomatoes, with juices (optional)
  • 2 tbsp tomato paste (optional)
  • 1 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 bay leaf
  • 1 tsp salt, or to taste
  • ½ tsp black pepper
  • 1 tbsp apple cider vinegar (optional)

Instructions

  1. Add cabbage, onions, and garlic to the slow cooker.
  2. Pour in the broth.
  3. Stir in tomatoes and tomato paste if using.
  4. Add olive oil, paprika, thyme, oregano, bay leaf, salt, and pepper.
  5. Cover and cook:
    • Low: 6–8 hours
    • High: 3–4 hours
  6. Remove the bay leaf.
  7. Stir in apple cider vinegar before serving, if desired.
  8. Taste and adjust seasoning.

Optional Add-Ins

  • Sliced carrots
  • Celery
  • White beans or chickpeas
  • Diced potatoes
  • Ground turkey or beef
  • Cooked sausage

Stovetop Version

  1. Sauté onions in olive oil for 5 minutes.
  2. Add garlic and cook 30 seconds.
  3. Add remaining ingredients.
  4. Simmer for 30–40 minutes until cabbage is tender.
