Slow Cooker Cabbage Soup

Ingredients
- 1 medium head green cabbage, chopped
- 2 large onions, thinly sliced
- 3 cloves garlic, minced
- 6 cups vegetable broth (or chicken broth)
- 1 can (14.5 oz / 410 g) diced tomatoes, with juices (optional)
- 2 tbsp tomato paste (optional)
- 1 tbsp olive oil
- 1 tsp paprika
- 1 tsp dried thyme
- 1 tsp dried oregano
- 1 bay leaf
- 1 tsp salt, or to taste
- ½ tsp black pepper
- 1 tbsp apple cider vinegar (optional)
Instructions
- Add cabbage, onions, and garlic to the slow cooker.
- Pour in the broth.
- Stir in tomatoes and tomato paste if using.
- Add olive oil, paprika, thyme, oregano, bay leaf, salt, and pepper.
- Cover and cook:
- Low: 6–8 hours
- High: 3–4 hours
- Remove the bay leaf.
- Stir in apple cider vinegar before serving, if desired.
- Taste and adjust seasoning.
Optional Add-Ins
- Sliced carrots
- Celery
- White beans or chickpeas
- Diced potatoes
- Ground turkey or beef
- Cooked sausage
Stovetop Version
- Sauté onions in olive oil for 5 minutes.
- Add garlic and cook 30 seconds.
- Add remaining ingredients.
- Simmer for 30–40 minutes until cabbage is tender.
