Recipe for Hot Stir-Fried Cabbage (800 Words)
Made with soft cabbage, garlic, red chilies, soy sauce, and fresh green onions, this spicy stir-fried cabbage is a tasty, colorful dish. It offers a delicious blend of smokey, savory, spicy, and somewhat sweet flavors. It’s ideal as a side dish or a quick vegetarian entrée because the cabbage softens without losing its firmness. It can be served with flatbread, noodles, or steaming rice.

Preparation time: 15 minutes

Cooking time: 15 minutes

Total time: 30 minutes

Servings: 3–4 people

Difficulty: Easy

Ingredients
1 medium head of cabbage, approximately 700–800 g

3 tablespoons cooking oil

5 cloves garlic, finely chopped

1 tablespoon fresh ginger, finely chopped

3–4 dried red chilies, broken into pieces

2 fresh green chilies, sliced

3 spring onions, chopped

2 tablespoons soy sauce

1 tablespoon oyster sauce (optional; use vegetarian mushroom sauce as an alternative)

1 teaspoon red chili flakes

1 teaspoon paprika or Kashmiri red chili powder

1 teaspoon sugar

1 tablespoon vinegar or lemon juice

½ teaspoon black pepper

Salt to taste

2 tablespoons water, if needed

1 teaspoon sesame seeds (optional)

Step-by-Step Instructions
Step 1: Prepare the cabbage

After removing any damaged outer leaves, give the cabbage a good rinse under running water. Let the cabbage drain or use a fresh kitchen towel to pat it dry. Slice the cabbage into medium-sized pieces after cutting it in half or quarters and removing the firm core. Larger chunks of cabbage retain their texture better when stir-fried, so avoid chopping it too small.

Separate any pieces that are stuck together so the seasoning can coat them evenly. Set the prepared cabbage aside. Dry cabbage is preferable because excess water can make the dish soggy instead of lightly fried.

Step 2: Chop the aromatics
Peel and finely chop the garlic and ginger. Slice the fresh green chilies into thin rounds. Break the dried red chilies into smaller pieces if you want their heat to spread throughout the dish. Chop the spring onions, keeping the white and green portions separate.

The white parts of the spring onions will be cooked with the garlic and ginger, while the green portions will be added near the end for freshness and color. Prepare all the ingredients before heating the pan because stir-frying happens quickly.

Step 3: Mix the seasoning
In a small bowl, combine the soy sauce, optional oyster sauce, vinegar, sugar, black pepper, paprika, and chili flakes. Stir until the sugar dissolves and the ingredients are evenly mixed.

Taste a tiny amount of the sauce and adjust the chili level according to your preference. If you enjoy a very spicy dish, add extra chili flakes or another fresh green chili. Keep in mind that soy sauce is already salty, so add salt cautiously.

Step 4: Heat the pan
Place a large wok or heavy frying pan over medium-high heat. Add the cooking oil and allow it to heat for approximately 30–45 seconds. The pan should be hot enough to fry the ingredients quickly without burning them.

A large pan is important because cabbage releases moisture as it cooks. If the pan is overcrowded, the cabbage may steam rather than develop the delicious browned edges associated with stir-frying.

Step 5: Fry the garlic, ginger, and chilies
Add the chopped garlic, ginger, dried red chilies, sliced green chilies, and the white parts of the spring onions to the hot oil. Stir continuously for approximately 30–60 seconds until the garlic becomes fragrant.

Do not allow the garlic to turn dark brown, as burnt garlic can make the entire dish bitter. If you prefer a milder flavor, remove some of the dried chilies before continuing.

Step 6: Add the cabbage
Increase the heat slightly and add the prepared cabbage to the wok. Toss it thoroughly with the garlic, ginger, and chilies using a spatula or cooking spoon.

Stir-fry for 5–7 minutes, turning the cabbage frequently so it cooks evenly. The leaves should begin to soften, shrink slightly, and develop a few golden-brown edges. Keep the heat relatively high, but lower it if the garlic or spices begin to burn.

For a softer cabbage texture, cook for another 2–3 minutes.

Step 7: Add the sauce
Pour the prepared seasoning mixture over the cabbage. Toss everything together so the sauce coats the leaves evenly. Continue stir-frying for another 2–3 minutes.

The soy sauce provides a savory taste, vinegar adds brightness, sugar balances the heat, and chili flakes deliver extra spice. If the cabbage looks too dry or the seasoning starts sticking to the pan, add one or two tablespoons of water.

Avoid adding too much water because the dish should remain glossy rather than watery.

Step 8: Adjust the flavor
Taste a piece of cabbage and adjust the seasoning. Add a little more soy sauce for saltiness, vinegar for tanginess, chili flakes for heat, or sugar if you prefer a slightly sweeter flavor.

If the dish tastes too salty, add a little more cabbage or a small splash of water and cook briefly. If you enjoy a smoky restaurant-style flavor, let the cabbage sit undisturbed against the hot pan for 20–30 seconds before tossing it again.

Step 9: Add the finishing ingredients
Turn off the heat and sprinkle the chopped green portions of the spring onions over the cabbage. Add sesame seeds if desired, and toss everything gently.

The spring onions add a fresh, slightly sharp flavor that complements the rich sauce. For extra freshness, you can also add a small squeeze of lemon juice immediately before serving.

Step 10: Serve and enjoy
Transfer the spicy stir-fried cabbage to a serving bowl while it is still hot. Garnish with additional spring onions or a few sliced green chilies if you like.

Serve it alongside steamed white rice, fried rice, noodles, or chapati. You can also turn it into a more filling meal by adding tofu, mushrooms, carrots, bell peppers, or thinly sliced chicken. If adding protein, cook it thoroughly before adding the cabbage.

Tips for the Best Results
Keep the pan hot: High heat helps brown the cabbage without making it excessively soft.

Do not overcrowd the pan: Cook in two batches if your pan is small.

Control the spice: Reduce the dried chilies and chili flakes for a milder version.

Keep some crunch: Stop cooking when the cabbage is tender but still slightly crisp.
