Street Corn Chicken Rice Bowl
🛒 Ingredients (Serves 4)
For the Chicken
1½ lbs boneless skinless chicken thighs or breasts
1 tbsp olive oil
1 tsp chili powder
1 tsp smoked paprika
½ tsp cumin
½ tsp garlic powder
½ tsp onion powder
½ tsp salt
¼ tsp black pepper
Juice of ½ lime
For the Street Corn (Elote-Style)
3 cups corn (fresh, grilled, or frozen & charred)
¼ cup mayonnaise
¼ cup sour cream or Greek yogurt
½ tsp chili powder
¼ tsp smoked paprika
1 small garlic clove, minced
Juice of ½ lime
⅓ cup crumbled Cotija cheese (or feta)
2 tbsp chopped cilantro
Pinch salt
For the Rice
3 cups cooked jasmine or basmati rice
Juice of ½ lime
1–2 tbsp chopped cilantro
Pinch salt
Optional Toppings
Diced avocado
Cherry tomatoes
Pickled red onions
Jalapeño slices
Extra Cotija
Hot sauce or chipotle crema
👩🍳 Instructions
1️⃣ Cook the Chicken
In a bowl, toss chicken with oil, lime juice, and seasonings.
Heat a skillet or grill pan over medium-high.
Cook 5–7 minutes per side (internal temp 165°F / 74°C).
Rest 5 minutes, then slice.
2️⃣ Make the Street Corn
If using frozen corn, sauté in a hot dry skillet until slightly charred.
In a bowl, mix mayo, sour cream, lime juice, garlic, and spices.
Stir in corn, Cotija, cilantro, and salt.
3️⃣ Season the Rice
Mix warm rice with lime juice, cilantro, and salt.
4️⃣ Assemble the Bowls
Layer:
Rice
Sliced chicken
Street corn mixture
Desired toppings
Drizzle with extra lime or chipotle sauce if desired.
