Sweet Spicy Rainbow Slaw
Ingredients
Vegetables
1 small green cabbage, shredded
1/2 purple cabbage, shredded
1 red bell pepper, thinly sliced
1 yellow bell pepper, thinly sliced
4 green onions, sliced
1-2 jalapeño peppers, seeded and thinly sliced (optional)
Dressing
3 tbsp extra-virgin olive oil
3 tbsp apple cider vinegar
3 tbsp raw honey or pure maple syrup
1/2 tsp crushed red pepper flakes
1/2 tsp garlic powder or 3 cloves fresh minced garlic
3/4 tsp sea salt (or to taste)
1/4 tsp cayenne or white pepper
1/8 tsp freshly ground black pepper
Directions
Make Dressing: In a small bowl, whisk together olive oil, apple cider vinegar, honey, crushed red pepper flakes, garlic powder, sea salt, cayenne or white pepper, and black pepper until fully combined.
Prepare Vegetables: In a large salad bowl, combine shredded green cabbage, purple cabbage, sliced red and yellow bell peppers, green onions, and jalapeños.
Mix: Pour the dressing over the vegetables and toss well to ensure everything is evenly coated.
Chill: Refrigerate the slaw for at least 15 minutes, up to 6 hours, to allow the flavors to meld.
Serve: Serve chilled and enjoy the sweet, spicy, and crunchy goodness!
