Chicken Meatball Bowl with Tzatziki

🛒 Ingredients
For the Chicken Meatballs
1 lb (450g) ground chicken
2 cloves garlic, minced
¼ cup finely chopped onion
¼ cup fresh parsley, chopped
1 tbsp fresh dill, chopped
1 tsp dried oregano
½ tsp paprika
½ tsp salt
¼ tsp black pepper
1 egg
¼ cup breadcrumbs (or almond flour for low-carb)
1 tbsp olive oil (for cooking)
For the Tzatziki Sauce
1 cup plain Greek yogurt (full-fat preferred)
½ cup grated cucumber (seeds removed)
1 clove garlic, minced
1 tbsp fresh dill, chopped
1 tbsp lemon juice
1 tbsp olive oil
Salt to taste
For the Bowl Assembly
1 cucumber, sliced
Cherry tomatoes, halved
Fresh parsley or dill for garnish
Mixed greens or shredded romaine
Optional: cooked rice, quinoa, or cauliflower rice
👩🍳 Instructions
Step 1: Make the Tzatziki (Do This First)
Grate cucumber and squeeze out excess water using a clean towel.
In a bowl, mix:
Greek yogurt
Cucumber
Garlic
Dill
Lemon juice
Olive oil
Salt
Stir well and refrigerate at least 15–30 minutes to let flavors develop.
Step 2: Prepare the Meatball Mixture
In a large bowl combine:
Ground chicken
Garlic
Onion
Parsley
Dill
Oregano
Paprika
Salt & pepper
Egg
Breadcrumbs
Mix gently with hands until just combined.
⚠️ Do not overmix or meatballs will be dense.
Step 3: Shape the Meatballs
Form into golf ball–sized balls (about 1½ tbsp each).
You should get about 16–18 meatballs.
Tip: Slightly wet hands to prevent sticking.
Step 4: Cook the Meatballs
Pan Method (Recommended for Browning)
Heat olive oil in skillet over medium heat.
Add meatballs without overcrowding.
Cook 8–10 minutes, turning occasionally until:
Golden brown on all sides
Internal temp reaches 165°F (75°C)
Oven Method (Less Hands-On)
Preheat oven to 400°F (200°C).
Place meatballs on lined baking sheet.
Bake 15–18 minutes until cooked through.
Step 5: Assemble the Bowl
In each bowl add:
Base (greens, rice, or quinoa)
4–5 meatballs
Sliced cucumbers
Tomatoes
Large spoonful of tzatziki
Sprinkle of fresh dill or parsley
Optional drizzle of olive oil or squeeze of lemon
