Sun-Dried Tomato, Spinach & Ricotta Grilled Cheese

Ingredients
- 4 slices sourdough or Italian bread
- ½ cup ricotta cheese
- ½ cup shredded mozzarella cheese
- ½ cup fresh spinach
- ¼ cup sun-dried tomatoes, chopped
- 1 clove garlic, minced
- 1 tablespoon fresh basil, chopped
- 1 tablespoon butter
- 1 tablespoon olive oil
- ¼ teaspoon Italian seasoning
- Salt and black pepper, to taste
Instructions
- In a small bowl, mix the ricotta, mozzarella, garlic, basil, Italian seasoning, salt, and black pepper.
- Spread the ricotta mixture evenly over two slices of bread.
- Top with the spinach and chopped sun-dried tomatoes.
- Place the remaining bread slices on top to form sandwiches.
- Heat a skillet over medium-low heat and add the butter and olive oil.
- Place the sandwiches in the skillet and cook for 3–4 minutes per side, pressing gently with a spatula.
- Cook until the bread is golden and crispy and the cheese is melted and creamy.
- Remove from the skillet, let rest for 1–2 minutes, then slice and serve warm.
Tip: For extra flavor, add a little balsamic glaze or crushed red pepper flakes before serving.
