- 1 tbsp olive oil
- 1 small onion, finely diced
- 4 garlic cloves, minced
- 1 can (14 oz/400g) crushed tomatoes
- 2 tbsp tomato paste
- ½ cup beef broth
- 1 tsp Italian seasoning
- ½ tsp dried oregano
- ½ tsp smoked paprika
- ¼ tsp crushed red pepper flakes (optional)
- Salt and freshly ground black pepper, to taste
For the Cheese Topping
- 2 cups shredded mozzarella cheese
- ½ cup freshly grated Parmesan cheese

- 2 tbsp chopped fresh parsley
- Extra Parmesan for serving

1. Cook the Pasta
- Bring a large pot of salted water to a boil.
- Cook the fettuccine according to package directions until al dente.
- Reserve ½ cup of pasta water, then drain the pasta.
2. Make the Bolognese Sauce
- Heat olive oil in a large skillet over medium heat.
- Sauté the onion for 3–4 minutes until softened.
- Add the garlic and cook for 30 seconds.
- Add the ground beef and cook until browned, breaking it into small crumbles. Drain excess fat if necessary.
- Stir in the tomato paste and cook for 1 minute.
- Add the crushed tomatoes, beef broth, Italian seasoning, oregano, smoked paprika, red pepper flakes, salt, and pepper.
- Simmer for 15–20 minutes, stirring occasionally until thick and flavorful.
3. Combine
Add the cooked fettuccine to the sauce and toss until evenly coated. If needed, add a splash of reserved pasta water for a silky consistency.
4. Melt the Cheese
Sprinkle the mozzarella evenly over the pasta. Cover the skillet for 2–3 minutes, or place it under the broiler for 2 minutes until the cheese is melted and bubbly.
5. Finish & Serve
Top with freshly grated Parmesan, chopped parsley, and serve hot with garlic bread or a crisp green salad.
