🧾 Ingredients (2–3 servings)

🧆 Meatballs

  • 400g minced beef or chicken
  • 1 small onion (finely grated or chopped)
  • 3 cloves garlic (minced)
  • 1 egg
  • ¼ cup breadcrumbs
  • 2 tablespoons fresh parsley (chopped)
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon olive oil (for cooking)

🥔 Roasted potatoes

  • 3 medium potatoes (cubed)
  • 2 tablespoons olive oil
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • ½ teaspoon dried oregano or thyme
  • ½ teaspoon garlic powder (optional)

🥒 Tzatziki sauce

  • 1 cup Greek yogurt
  • ½ cucumber (grated and squeezed dry)
  • 1–2 cloves garlic (minced)
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh dill or mint (chopped)
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

  • Cherry tomatoes

🔪 Instructions

1. Roast the potatoes

  • Preheat oven to 220°C (425°F).
  • Toss potatoes with olive oil, salt, pepper, paprika, oregano, and garlic powder.
  • Spread on a baking tray in a single layer.
  • Roast for 30–35 minutes, flipping halfway, until golden and crispy.

2. Prepare the meatballs

  • In a bowl, mix minced meat, onion, garlic, egg, breadcrumbs, parsley, oregano, paprika, salt, and pepper.
  • Mix until just combined (don’t overmix).
  • Shape into small meatballs.

3. Cook meatballs

  • Heat olive oil in a pan over medium heat.
  • Cook meatballs for 10–12 minutes, turning until browned and fully cooked inside.
  • (Optional: bake at 200°C for 18–20 minutes instead.)

4. Make tzatziki

  • Grate cucumber and squeeze out excess water.
  • Mix with yogurt, garlic, olive oil, lemon juice, dill/mint, salt, and pepper.
  • Chill for 10 minutes for best flavor.

5. Assemble the bowl

  • Add roasted potatoes as base.
  • Place meatballs on top.
  • Add fresh vegetables around the bowl.
  • Spoon tzatziki generously over everything.
