Mushroom Gyros with Herbed Yogurt
Ingredients
2 cups mixed mushrooms (such as portobello, cremini, and shiitake), sliced
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 tablespoon olive oil
1 teaspoon smoked paprika
1 teaspoon ground cumin
Salt and pepper to taste
4 pita breads
Fresh parsley, chopped for garnish
Herbed Yogurt Sauce:
1 cup Greek yogurt
1 tablespoon lemon juice
1 clove garlic, minced
2 tablespoons fresh dill, chopped
2 tablespoons fresh mint, chopped
Salt and pepper to taste
Directions
Prepare the Vegetables: Preheat oven to 400°F (200°C). In a bowl, toss the sliced mushrooms and bell peppers with olive oil, smoked paprika, cumin, salt, and pepper. Spread evenly on a baking sheet and roast for 15-20 minutes, until tender and slightly charred.
Make the Herbed Yogurt Sauce: In a bowl, combine Greek yogurt, lemon juice, garlic, dill, mint, salt, and pepper. Mix until smooth and set aside.
Assemble the Gyros: Warm the pita breads in the oven or on a skillet. Layer the roasted mushrooms and bell peppers on each pita. Drizzle generously with herbed yogurt sauce.
Serve: Garnish with fresh parsley and serve warm. Enjoy these flavorful vegetarian gyros!
