Sunny-Side Breakfast Baskets

📝 Ingredients (Serves 4–6)

  • 6 slices bread (white, whole wheat, or brioche)
  • 6 eggs
  • 6 slices turkey bacon or regular bacon
  • ½ cup shredded cheese (cheddar, mozzarella, or your choice)
  • 2 tbsp butter (melted)
  • Salt & black pepper (to taste)
  • Optional: chopped parsley, chili flakes, or green onions

👩‍🍳 Instructions

1. Preheat Oven

  • Preheat your oven to 375°F (190°C)
  • Grease a muffin tin with butter or oil

2. Prepare Bread Cups

  • Trim crusts (optional) and flatten each bread slice with a rolling pin
  • Gently press each slice into the muffin cups to form a “basket” shape

3. Add Fillings

  • Brush the bread lightly with melted butter
  • Place a slice of bacon around the inside of each basket
  • Sprinkle a little cheese at the bottom

4. Crack the Egg

  • Carefully crack one egg into each bread basket
  • Season with salt and pepper

5. Bake

  • Bake for 15–20 minutes:
    • 15 min = soft yolk (sunny-side)
    • 18–20 min = firmer yolk

6. Finish & Serve

  • Sprinkle extra cheese and herbs on top
  • Let cool slightly, then gently remove from the muffin tin

💡 Tips

  • Use quail eggs for mini baskets
  • Add veggies like spinach, mushrooms, or tomatoes for a healthier twist
  • For extra crispiness, toast bread lightly before shaping.
