Meatballs with Baked Mozzarella Stuffing


1 little grated onion
1/2 cup chopped fresh flat-leaf parsley
2/3 cup parmesan cheese, grated
a third of a cup of Italian bread crumbs
1 big egg
2 tbsp marinara sauce plus a third cup
3 minced garlic cloves
1 tsp crushed red pepper flakes
Season with salt and pepper to taste.
1 packet (1.5-2lbs) ground beef
16 mozzarella cheese cubes (1/2 inch cubes)


Place the oven rack in the bottom third of the oven. Preheat the oven to 400°F. Combine the onion, parsley, parmesan cheese, bread crumbs, egg, marinara, garlic, red pepper flakes, salt, and pepper in a large mixing bowl. Once combined, add the meat and stir with your hands. Make 16 meatballs out of the meat mixture.
Create a hole in the center of each meatball and insert a cube of mozzarella. Reform the meatball such that the cheese is entirely hidden. Fill a baking dish halfway with 1/3 cup marinara. Insert the meatballs and drizzle with extra virgin olive oil. Bake for 15 minutes, or until thoroughly done.
